Mauro has been Executive Chef since 2019 and is responsible for multiple organizational and operational activities: he coordinates and supervises all kitchen staff, training new arrivals and ensuring an efficient work environment;

he is responsible for creating new menus, selecting ingredients and defining recipes; he constantly monitors the quality of the dishes prepared and the ingredients used; he actively participates in the selection of suppliers and the choice of raw materials; he collaborates with the dining room staff to ensure impeccable service.
